I am founder and leader of the Sustainable Food Innovation Group and senior researcher/associate professor at the Novo Nordisk Foundation Center for Biosustainability at the Danish Technical University.
I received a DPhil in Geography and the Environment from the University of Oxford, where I was funded by the Mortimer May Scholarship at Hertford College. During my degree I was a visiting PhD student in the Section for Evolutionary Genomics at the GLOBE Institute, University of Copenhagen.
I have also received an MPhil in History and Philosophy of Science from the University of Cambridge, and a BA in the Humanities from Yale University.
Between them I conducted and led research as lead researcher at Nordic Food Lab, a former non-profit organisation founded by Restaurant Noma to investigate the edible and gastronomic potential of the Nordic region.
